Key Botanicals
Situated adjacent to the water meadows, our kitchen gardens at Thyme are an abundant space where neat rows of carrots, radishes and runner beans flourish, alongside carefully selected flavoursome and unusual varieties of flowers, herbs, fruits and vegetables. As you wander, breathe in the deliciously fragrant notes of blackcurrant leaves, rhubarb and tomato vine. Our designs are deeply rooted in this special place, celebrating the beauty in humble, home-grown vegetables.
Carrots, domesticated from the wild species, Daucus carota that grow in the water meadows here at Thyme were originally grown for their seeds and leaves. Careful selection over the years for a less woody tap root has given us this familiar bright and cheerful root vegetable.

Radishes have been cultivated for over 4,000 years, originating in Southeast Asia and spreading worldwide. Varying in colour from purple to red, as well as in their shape and size, radishes are famous for their crisp texture and peppery flavor. We love them straight from ground, quickly washed, and served simply with butter.
